Winemaking | The grapes were picked by hand from our own vineyard, selected at point of excellent ripeness in 20 Kg boxes and gently destalked. Fermentation occurred in low-capacity stainless steel tanks, followed by a long maceration period and further 12 months maturation in new 500-litre Allier oak barrels. After a fine-tuning, the wine was bottled and left to rest in a controlled environment for further maturation. Produced only in years of exceptional quality harvests and resulting from a singular vinification, this COMPORTA wine was not subjected to tartaric stabilisation, and may therefore throw a slight deposit. |
